Yep, I said it! It’s Friday Cookie Day! Today it’s the best of both worlds. Some love chocolate, some do not! So, if you love chocolate, dip your cookies! If you don’t, leave them out. If you’re unsure, dip them half way!!
Lets bake!

Yields 45 medium sized cookies
Ingredients;

300g caster sugar
240g unsalted butter softened
1 large egg
1 1/2 tsps vanilla extract
1 tsp orange blossom water
370g plain flour
1 tsp bicarbonate of soda
1/2tsp baking powder
100g Dark Chocolate

Method;
1) In a free standing mixer using the paddle attachment, mix the butter and sugar, on medium to high speed until light and fluffy
2) Add the Egg, followed by vanilla extract and orange blossom water

3) Mix on low speed, until well combined
4) In a seperate bowl, add flour, bicarbonate of soda and baking poder together
5) Sift flour mix over the butter mixture until all incorporated
Checkpoint: SCRAPE! SCRAPE! SCRAPE!
6) Using a table spoon scoop the mixture to create dough mounds (1/3 Tbsp), and place on baking sheet. This creates about 45 cookie dough mounds. Flatten the top of mounds lightly.

7) Chill in refrigerator for 2 hours
8) Preheat oven to 180 C. Place dough mounds on baking sheet lined with greaseproof paper, place mounds 1 1/2 inches apart.
9) Bake in the centre of the oven for 10-15 minutes
10) Melt the chocolate, either in microwave or in a heatproof bowl over simmering water

11) Dip each cookie half way through into the melted chocolate

12) Leave to cool on a greaseproof paper.
